hospitality scene, adaptability is key. Denis emphasizes
open-mindedness, client-centricity, feasibility studies,

of his tailored consultancy services. But the ultimate feat

The challenges faced by businesses in the HORECA
industry in Malta are not unique. According to Denis,
one of the most pressing challenges is ‘manning,’
encompassing recruitment, training, and staff retention.
He believes in adapting to the expectations of the new
generation entering the workforce, recognizing the
importance of work-life balance and fostering a positive
work environment.
Much like other aspects of the industry, sustainability
takes center stage in Denis’ consultancy mission. From
advocating for local and seasonal produce to urging a
cohesive national strategy, his approach extends to both
ecological and team dynamic sustainability.
Denis anticipates a trend towards authenticity,
embracing local traditions, and a return to genuine
Maltese heritage. His passion for working with people,
coupled with his commitment to the preservation and
promotion of local culinary identity, drives his consultancy
efforts.
“I am very lucky to be involved in the opening of a new
outlet which will promote and sell mostly local products.
Spearheaded by the Xara Collection, this innovative
project will prominently feature ingredients harvested
from its own Xara Garden, while also prioritizing
the inclusion of local products in the menu.”
“Envisioning the future, my enthusiasm lies in upcoming
events such as Dine with Stars 2024 which will be hosted
at the Phoenicia Hotel in February. This event will feature
a collaborative effort from the six local MICHELIN-starred
Chefs, uniting to prepare a charity Gala dinner.
I will continue my partnership with the Xara Collection
(The Xara Palace, the De Mondion, Trattoria 1530
AD, Medina Restaurant, Rosamí at the Villa, Oka’s at
the Villa, Xara Catering and Xara Gardens) preparing
for some exciting plans in 2024, and I will also work
on initiatives aimed at fostering better networking
among industry operators; giving Malta and Gozo
my commitment in contributing to their growth and
development in the industry.”
