Gaby's journey into the world of wine began during her studies of the sensorial universe while pursuing her Master's Degree and Doctorate. Her exploration of the concept of the ‘invisible image’, translating emotions into sound and fragrance, naturally led her to the world of wine.
Tasting wine became an immersive experience, a suspended moment in time where stories, terroir, and history converge. It is the emotional alignment in that moment that captivates Gaby and fuels her passion for her craft.
As a female sommelier, Gaby has encountered challenges along her path. In a predominantly masculine industry, she had to carve out her own space and assert herself as a respected professional.

Gaby's commitment to living wines is a cornerstone of her philosophy; “natural wines crafted solely from grapes encapsulate purity and energy, unadorned by additives or manipulation.” She champions these living wines, appreciating their truthfulness and the craftsmanship required to create them.
In collaboration with Chef Amelie Darvas at Aponem Auberge du Presbytère, Gaby recently crafted a memorable food and beverage pairing. A seemingly simple yet complex dish of leek extraction, lightly smoked potato emulsion, and toasted bread sauce came alive with the accompaniment of a Loire Valley Cabernet Franc.
