Q: Tell us about your educational background and your work experience to date.
I enrolled into ITS at the age of 18 and spent my internship in London working at one of Gordon Ramsay’s MICHELIN star restaurants, Petrus. It was a wonderful, yet challenging experience. It was very character building and I learned so much throughout the journey. After returning to Malta, I spent my last year at ITS studying Restaurant Management until I got my degree. I am currently running my own business with Aalto Restaurant and Deep Blu Boutique Hotel. I work mainly as Front of House at Aalto ensuring that my guests have an exquisite dining experience.
Q: Why are you so passionate about the restaurant industry?
It most likely stems from a deep appreciation that I have for culinary arts. I have always enjoyed the experience of eating out and trying different cuisines. The restaurant industry gives me the opportunity to meet new people and connect with them through food. It is a dynamic and ever-evolving industry which pushes me to always keep learning.

Q: Where do you see yourself in the next five years?
I would like to expand our culinary offerings and continue to establish a loyal customer base. Perhaps even exploring new innovative dining concepts to elevate Aalto’s presence in the industry.
Q: Tell us one of the most rewarding experiences in your profession to date.
It would have to be my first summer at Aalto. Seeing the fruit of all the hard work, brainstorming, sacrifice and discipline come to life is a feeling that I cannot describe in words. Opening my restaurant has been the pinnacle of my career, providing me with immense pride and satisfaction.
Q: What growth do you anticipate for the hospitality and catering industry in the next 20 years?
The hospitality and catering industry is likely to see continued growth in the next 20 years. Sustainable practices, innovative and unique experiences could contribute to the industry’s expansion. Adaptability and staying attuned to changing consumer needs will be crucial for sustained growth.
